Ingredients
Makes one loaf.
- 3 banana bread bananas (well ripen)
- 65g sugar
- 65g + 50g brown sugar
- 80mL vegetable oil (75g)
- 10mL vanilla extract
- 300g flour, all-purpose
- 5g baking soda
- 3g cinnamon
- 6g salt
- 125g semi-sweet chocolate chips (make sure to get vegan chips if desired), or nuts
Directions
- Preheat oven to 175°C (350°F)
- Mash bananas until roughly smooth
- Mix in sugar, 65g brown sugar, oil, and vanilla
- Mix in flour, baking soda, cinnamon, and salt
- Fold in chocolate chips or nuts
- Grease a 9"x5" bread pan and lay a strip of parchment paper longwise. Transfer batter into pan and sprinkle remaining brown sugar on top.
- Bake for 50 minutes or until a toothpick stuck in center comes out clean. If it smells burnt, it has been too long.
